焼き物と地域の歴史をつなぎながら、
この土地に残る物語をみなさんと一緒に探っていきます。

Welcome to SARAYAMA Lab.
SARAYAMA Lab explores the history of Kiyomizu Sarayama Ware, a type of pottery believed to have been produced in the Kokura area.
We investigate old documents, maps, place names, local stories, and the landscape that remains today.
Rather than simply looking for a final answer, we want to discover new clues and connect the history of this area with the people who live here today.

YAKIGOYA — A Memory of Kiyomizu Sarayama
Local memories tell us that a place known as “Yakigoya” once existed in the Shimizu Sarayama area.
Although little of its former appearance remains today, local stories, old documents, maps, and place names may provide clues about the activities that once took place here.
SARAYAMA Lab continues to explore these small clues in search of the history of Shimizu Sarayama Ware.
【皿山お地蔵さん】
皿山お地蔵さん ― 今も残る、地域の記憶
清水皿山には、現在も残る「皿山お地蔵さん」があります。
地域の口伝によれば、江戸時代からこの地に伝わるお地蔵さんで、かつて清水皿山焼の窯があったとされることから、窯の火を恐れ、火災から地域を守っていただくために建てられたと伝えられています。
これは、現在まで地域に残されてきた大切な言い伝えの一つです。
本当に、この場所に清水皿山焼の窯があったのでしょうか。
SARAYAMAラボでは、この口伝も一つの手がかりとして、古資料や地形、地名、現地の記憶などを調べながら、清水皿山焼の歴史を追っています。
そして、この皿山お地蔵さんのすぐそば、約3メートルの場所にSARAYAMAラボがあります。
清水皿山を訪れた際には、ぜひお地蔵さんにもお参りください。

ラボは月・水・金曜日の15時30分〜18時に開室しています。
資料を見てみたい方、清水皿山焼について話を聞いてみたい方、地域の昔のことをご存じの方も、どうぞお気軽にお越しください。

SARAYAMA Lab has opened as a place to explore the history of Kiyomizu Sarayama Ware, believed to have been produced in the Kokura area.
We share discoveries from old documents, maps, local stories, and field SARAYAMA Lab is open on Mondays, Wednesdays, and Fridays from 3:30 PM to 6:00 PM.
Visitors are welcome to view our materials, learn about Kiyomizu Sarayama Ware, or share stories and memories of the local area.
If possible, please contact us by phone or email before your visit.
Parking: Space for approximately 3 compact cars.
SARAYAMA Lab is currently preparing for its opening.

三官飴 Sangan-ame rice malt candy
『和漢三才図会』について
江戸時代の百科事典に掲載:『和漢三才図会』(1711〜1732年頃成立)に、小倉の名物として「豊前小倉膠飴(三官飴)」が記載されている。
見た目と味の特徴:「色琥珀に似て透き通り、味もまた淡く美なり」と記され、琥珀色の透明感と上品で優しい甘みが評価されていた。
全国的な知名度:当時の代表的な百科事典に載るほど、小倉の飴は全国的に有名であった。
Sankan-ame (Kokura’s Historic Amber Candy)
Sankan-ame is a traditional candy from Kokura with a rich history dating back to the Edo period. Recorded in the famous 18th-century encyclopedia Wakan Sansai Zue, it was celebrated nationwide for its beautiful, clear amber color and subtle, elegant sweetness. Enjoy a taste of authentic Japanese history and craftsmanship.

【室町町付近に飴屋あり】
江戸時代、小倉には飴屋が何軒も
江戸時代の小倉城下には、8軒の飴屋があったと伝えられています。
その中でも、長崎街道沿いの**室町にあった「三官屋宇兵衛」**は有名でした。
三官飴は壺に入れて売られ、小倉の名産として全国に知られ、土産や贈り物にも使われていました。
東曲輪(現在の京町・米町周辺)に6軒、
西曲輪(小倉城を含む室町周辺)に2軒。
江戸時代の小倉は、まさに「飴の町」だったのです。
Kokura Had Many Candy Shops in the Edo Period
During the Edo period, there were said to be eight candy shops in Kokura Castle Town.
One of the most famous was Sankanya Ubei, located in Muromachi along the Nagasaki Kaido road.
Sankan-ame was sold in pottery jars. It became famous as a specialty of Kokura and was used as a souvenir and a gift.
There were six candy shops in the eastern area, around present-day Kyomachi and Yonemachi, and two in the western area, around Kokura Castle and Muromachi.
Kokura was truly a town of candy in the Edo period.
三官飴レシピ【参考】
sankann-ame recipe
飴は、麦芽(または穀芽)と糯米(もちごめ)を煮熟して作る。
薬用に用いるのは糯米で作ったものである。濃厚で蜜の如く紫を帯びたものを「膠飴(こうい)」といい、引き伸ばして白くしたものを「餳(せい)」という。
【効能】
体力を補い、気を整え、腹鳴・喉の痛みを止め、胃腸の調子を和らげる。腹痛・吐き気・病後や産後の養生に良く、薬に加えて煎じると極めて効能が高い。
【製法(搾飴造法)】
1. 蒸した糯米一斗を釜に入れ、麦芽の粉末五合を加えて混ぜ合わせ、布を被せて二時(約4時間)ほど置く。
2. これを煮詰めて糟(かす)を取り除き、抽出した汁をさらに練り煮詰める。
3. 柔らかく仕上げたものを「餳(水飴)」、硬く仕上げたものを「飴」といい、硬いものは切り分けて保存する。
1. Saccharification (Mashing): Steam 1 to (approx. 18 liters) of glutinous rice to make cooked rice, place it in a pot, add 5 go (approx. 0.9 liters) of malted barley powder, mix thoroughly, cover with a cloth (such as a sake-straining sack), and leave it to rest for about 2 ji (approx. 4 hours) to allow enzyme conversion.
2. Filtration & Concentration: Boil and concentrate the mixture, strain out the solids (spent grain), and then further boil down and knead the extracted liquid (sweet juice).
3. Finish & Texture:
Soft Type (Sei / Liquid Syrup): Finished at a soft, viscous consistency (equivalent to liquid water candy).
Hard Type (I / Solid Candy): Boiled down further until hard; this type can be cut into smaller pieces for serving and storage.
